KokosCocos curry with roasted chicken chunks, sugar snaps and mint
|200 gr||roasted chicken chunks|
|2 tbsp||soy oil|

|1 tbsp||yellow curry paste|
|200 ml||cocos milk|
|300 ml||chicken stock|
|200 g||sugar snaps, rinsed|
|100 g||Basmati rice|
|½||red pepper cut in small rings|
|Handful||of mint and coriander leaves|
|2 tbsp||baked onions|
Fry the onion and garlic in the oil, add the curry paste and fry a little longer. Add the cocos milk and stock. Stir and add the sugar snaps and roasted chicken chunks. Simmer for 5 minutes, taste and add salt and pepper to taste if necessary.
In the meantime, cook the Basmati rice as instructed on the package. Serve the rice and the chicken curry together. Sprinkle the red pepper on top. The herbs and baked onions are optional.
